After pouring the mixture in the pan, simply freeze overnight. No baking! No heat! No oven! 2 cans milk, sweetened condensed 2 12-ounce tubs whipped cream 10-12 lemons, freshly squeezed juice 10-12 eggs, yolks only 1-1/2 boxes vanilla wafer cookies Use a 13x9 inch dish. Crush one box of cookies, and spread cookies evenly in dish. Garnish remaining cookies around the edge of dish. Set dish aside. In a bowl, combine the condensed milk and egg yolks. Then add lemon juice and mix well. Add and fold in one tub of whipped cream. Pour on top of cookies and spread evenly. Garnish with remaining whipped cream. Freeze pie overnight. Allow to sit at room temperature for 30 minutes before serving. Makes 6-10 servings. Enjoy! Printer-friendly version.
